Tojiro F-990 Chinese Chef’s Knife – very solid knife, and the VG-10 steel is great at edge holding. The fit and finish could be better but nothing a little sandpaper and time can’t fix.
Skylight 7″ Chinese Chef’s Knife – search “NA cleaver” in Amazon to find that knife. It is very affordable. The initial grind of the edge is a bit rough. It did took me a while to correct it on a 300 grit diamond stone. The fit and finish are great. I haven’t used the knife long and often enough to comment on the edge holding abilities. If it is truly made out of German X50Cr15MoV steel, then it should perform similar to other German knives.
Shi Ba Zi Zuo 7″ Meat Cleaver – very affordable, no problem chopping pork rib bones, and very comfortable handle. It weights 19.5oz(550g) which is perfect for its purpose.
Higo No Kami(size L) Pocket Knife – also labeled as size 10 or size 100mm. Simple old school design. Blue paper No. 2 blade steel is excellent at holding an edge. The perfect size for a pocket knife. The one of size XL(size 120mm) is too big in the pocket for daily carry. The one of size M(size 90mm) is too small for me to use.
Shapton KUROMAKU Water Stone 5000 Grit and 8000 Grit – I resisted the idea of adding water stones to my sharpening kit for a long time. After trying these stones out, I really start to like them. They only need a splash of water during use and they give knives great polish.
