Finding A Good Chinese Chef Knife

Knifes I have tried

Mercer M33220 (8″) – returned due to bent blade.

Shi Ba Zi Zuo F208-2 (8″) – returned because I didn’t like they hammer bent the end of a full tang to secure the connection between the knife and the handle. It is too rustic for me.

*Dengjia M-9080 (7″) – my current favorite. I wish it is 8″ long.

Knife on the way

Zhen A1T (8″) – curious about VG-10 steel, and how would I like the TPR handle.

Knifes to try in the future

Tojiro F-921 (9″) – I am worry about the blade length and the weight. It might be too big for me.

Tojiro F-990 (7″) – I wish the blade height is around 88mm(3-1/2″) instead of 74mm(3″).
